· Gingerbread Pancakes –
Ingredients

1/2 cups of flour

teaspoon baking powder

teaspoon pumpkin pie spice

Tablespoons molasses

eggs

Tablespoons butter, melted

cup milk
Instructions
1. Preheat skillet to 350 degrees
(medium heat)
2. In a large bowl, whisk together all
dry ingredients.
3. In a separate bowl, mix eggs, milk,
molasses, and butter.
4. Slowly add wet ingredients to dry
ingredients and stir until combined, do not over-mix.
5. Scoop about 1/4 of mixture onto
skillet, and flip when top begins to bubble (about 2 minutes)
6. Cook for 2 more minutes until
pancakes are lightly golden brown.
7. Top with your favorite syrup and
powdered sugar. Enjoy!
· Eggnog Pancakes –
Ingredients
For the pancakes:
§ 2 cups flour
§ 1 tablespoon baking powder
§ 1/2 teaspoon salt
§ 1/4 teaspoon nutmeg
§ 2 eggs
§ 1 teaspoon vanilla
§ 2 tablespoons butter melted
§ 2-2 1/2 cups eggnog
For the vanilla syrup:
§ 1 cup sugar
§ 2 tablespoons cornstarch
§ 1/4 cup butter
§ 1/4 teaspoon salt
§ 1 tablespoon vanilla
§ 1 1/2 cups water
§ 1/4 cup heavy cream
Instructions
1. In a large bowl, whisk together
flour, baking powder and salt.
2. In a medium bowl, whisk together
eggs, vanilla and melted butter. Whisk in 2 cups eggnog. Add wet ingredients to
dry ingredients and stir until smooth.
3. If needed, add additional eggnog, a
little bit at a time, until batter reaches desired consistency.
4. Pour batter by 1/4 cupfuls onto a
lightly greased, hot griddle. Turn pancakes when bubbles form on top, then cook
a minute or two longer, until the second side is golden brown.
5. Serve pancakes warm, topped with
vanilla syrup, whipped cream, and ground nutmeg.
6. To make syrup: In a medium sauce pan
whisk together water, sugar and cornstarch. Bring to a boil. Boil, stirring
constantly for 3-5 minutes.
7. Reduce heat. Stir in butter, salt and
vanilla until butter is completely melted. Add heavy cream and simmer a few
minutes longer.
· Overnight Cinnamon Apple French Toast Casserole! –
INGREDIENTS:
CASSEROLE
1 lb loaf Sourdough Or French Bread,
cut into chunks
3 cups (326g) chopped apples (2 large apples)
8 large eggs
2 cups (480ml) milk (whole or 2%)
1/2 cup (120ml) heavy whipping cream
1/2 cup (104g) sugar
1/4 cup (36g) light brown sugar, unpacked
2 tbsp vanilla extract
1 1/2 tsp ground cinnamon
3 cups (326g) chopped apples (2 large apples)

1/2 cup (120ml) heavy whipping cream
1/2 cup (104g) sugar

STREUSEL TOPPING
3/4 cup (98g) all-purpose flour
3/4 cup (169g) firmly packed brown sugar
1 tsp cinnamon

1/2 cup (112g) salted butter, cut into pieces

DIRECTIONS:
1. Grease a 9×13 inch casserole dish.
2. Combine the bread chunks and chopped apples and lay in an even layer in the bottom of the dish.
3. In a large bowl, whisk together the remaining ingredients, minus the streusel, and pour evenly over bread. Cover the casserole and store in the fridge overnight.
4. When ready to bake the casserole, preheat the oven to 350°F (176°C).
5. Bake the casserole for about 35-40 minutes.
6. While casserole bakes, in another bowl, combine the dry ingredients for the streusel. Add the butter and mash into the dry mixture until it forms a crumbly mixture.
7. Remove the casserole from the oven and crumble the streusel over the top of the casserole.
8. Continue baking casserole for about 5 minutes, or until the streusel is melted over the top.
9. Serve the casserole warm with syrup.

Ingredients

Directions

Preheat
round waffle iron. Spray with no stick cooking spray. Mix all ingredients,
except confectioners’ sugar and candy pieces, until blended.
·
Pour
about 1/3 cup of the batter onto center of hot waffle iron. Close lid. Cook
about 5 minutes or until no longer steaming. Carefully remove waffle. Repeat
with remaining batter.

Break
each waffle into 4 triangles. Layer 3 triangles on a serving plate to resemble
a Christmas tree. Sprinkle with confectioners’ sugar. Use candy-coated pieces
to decorate the tree as ornaments.
